Capfruit has remained faithful to a variety endemic to the Rhone Valley, Bergeron. Self-fertile, the Bergeron apricot tree produces an abundance of large, firm, sweet and tangy orange-yellow fruits with a slightly oblong shape. It is this acid/sugar balance that appeals to pastry chefs.
